RECIPE: Banana and Cinnamon Loaf

In the way of cooking or baking posts I have done little actually more like none and I thought I would change it up and give recipe you are gonna love. After searching up many ways to make it I just went with what I thought and gave it a go and it turned out alright.

2 bananas (better when they are totally ripe as you have to mash them)
2 eggs
140g of butter
140g self-raising flour
140g caster sugar
1tsp of baking powder (get the little sachets they are 1 tsp a packet so it's easy)
50g icing sugar
half 1tsp of cinnamon

What to do
Pre heat over to around 180C/160c fan/gas 4 then butter the banana loaf tin with a bit of butter (not any of the 140g)
Put butter and sugar in large bowl and cream together until it looks light and fluffy
Slowly add eggs and flour bit by bit and mix together until combined
Add sachet of baking powder and half the tsp of cinnamon
Mash the two bananas until it looked a bit like baby food and add to mixture
Pour into the loaf tin and place in oven to around 30-35 minutes check it's cooked through after the time by placing a knife or skewer and if it comes out clean it's good to go. If it's a little wet still place back in keeping an eye on it for around 5 minutes.
When ready leave to cool in the tin for around 10 minutes and after place on wire rack if available.

When cool mix icing sugar with 2-3 tsp of water in a bowl until it's thick but runny and drizzle over your loaf to decorate.

Tah! your loaf it ready to eat!
