Healthy Banana Pancakes

I have seen loads of people talk about pancakes just using banana's as a substitute for milk and I became rather curious and with my week off I have time in the morning's to have a cheeky breakfast that takes longer than a simple bowl of cereal.

1 Banana
2 Eggs

First off peel your banana and break it into a bowl and using a fork break it down into basically mush (I made that sound appealing..) when it is into mush break an egg at a time into the bowl with the banana and whisk it till it is broke up. If you don't want the second egg you don't need to add it but two will make around 5 pancakes and let's be honest the more pancakes the better.
After you are finished with that take a frying pan and a little bit of oil and heat it up. Tip if you put a little bit of ingredients in the frying pan you can tell when it is hot enough to put a pancake in the pan. Using a ladle put it into the frying pan and heat it on both side for about 2 minutes on each should give you the colour in the above picture.
When you have all your pancakes done add some blueberries or and fruit you want on top and whatever flavour jam you want drizzled on top and you are ready to dig in.
